Surrounded by magnificent nature
The endless blue sky, the powerful light of the sun, and the gentle wind that blows over the green fields. The distinctive Alsace-style red roof tiles of Akayane Distillery stand out amongst the green tea and sweet potato fields of Minamikyushu City, which is the largest producer of these crops in Japan by municipality. Blessed with a year-round warm climate and the well-drained volcanic soil of the “Shirasu” plateau, the best place to grow sweet potatoes is at the base of Mt. Kaimondake. Our local volcano is known as “Satsuma Fuji” for its beautiful conical shape, which resembles the country’s most famous mountain.
The clean groundwater filtered through the volcanic soil contains abundant minerals and is an equally indispensable ingredient of our process. At AKAYANE, we focus on making spirits that cherish the terroir of Minamikyushu.

Where time passes perfectly
Patience and determination. Spirits-making is also a collaborative effort with time. It takes time and effort to grow the Satsuma-imo sweet potatoes and rice we use, and after harvesting it becomes a race to maintain their freshness throughout the production process.
Equally important are the split-second decisions and fine-tuned timing of fermentation and distillation, and of course judgments about the length of maturation.
Born from the harmony between people, nature, and time, Japanese distilled spirits slowly deepen their flavors and are refined as the seasons change.

The thoughts and feelings of everyone involved gives depth and breadth to each drop of spirit we make. From the farmers who supply Akayane Distillery with our ingredients, to the toji (master brewer/distiller) and our staff sweating over every step of the production process, to the distributors and retailers who convey all of our passion to the consumers, and above all, to every one of our regular drinkers. Our future lies in the connections between all of our imaginations and in each part we play.
