In our search for those possibilities, at AKAYANE we use everything from industry standards to unique botanicals. The sweet potatoes we use for our base alcohol are also all carefully grown by our contracted farmers.
In order to bring out the true aroma of the ingredients, we identify the most suitable distillation methods to make our products.

The techniques we learned from Jean-Paul Metté, coupled with traditional Japanese distillation methods, come alive under the name AKAYANE.
