Meeting Philippe Traber of Distillerie Metté, the distillery founded by the world’s most renowned producer of eau de vie Jean-Paul Metté, broadened our horizons to the world. The high quality and deep flavors of the spirits produced by Metté are featured prominently in Michelin-starred restaurants across Europe.

We visited Metté several times to learn about the world’s best distilled spirits. Philippe takes pride in being a distiller and shared his knowledge, skills, and philosophy with us in earnest.

We are proud to be able to say that this experience is the backbone of AKAYANE.

To our friend Philippe Traber in Alsace, France, the godson of Jean-Paul Metté and the man who taught us the techniques of the world’s water of life, we extend our most heartfelt gratitude.

German distillation unit manufacturer arnold holstein produces custom-made stills for eau de vie, grappa, Scotch whisky, bourbon, gin, vodka, and many other types of distilled spirits. Skilled craftspeople design and engineer high-quality distillation equipment to produce the world’s finest liquors.
After learning that the quality and taste of the spirit are greatly affected by the still, we ordered a custom hybrid distillation unit for AKAYANE in 2008.
The spirits produced by this still allow you to directly sense the aroma of the base ingredients, with a surprising and impressive flavor.
Using this indirect heat method of distillation gives us a renewed confidence in our spirits-making.

Barrels

Barrels
AKAYANE

A high-quality maturation deepens the flavor of distilled spirits. What kind of barrel, for how many years? We learned that aging the new distillate draws out the sweetness and aromas to create an even more exquisite liquor.
In our search for the perfect casks, we met with the Allary cooperage in Cognac, France in 2007. Their barrels are created from French Limousin oak, the “King of the Forest.” The finest quality of these prized barrels promises the best maturation for our spirits. Transferring the spirits from new barrels to used barrels nurtures the alcohol as well as the casks themselves. Aging in such high-quality containers increases the sweetness and aroma, and induces a more perfect spirit.
